A perfect blend of protein rich kidney beans, quinoa, veggies and spice. These are some seriously wholesome burgers which come together easily and can frozen to enjoy for later
Ingredients:
Rajma (kidney beans) cooked - 1 cup
Quinoa (cooked) - 1 cup
Bell pepper, 1 large - chopped
Green Onion, 2 - chopped if not using food processor
Mushrooms - 4-5
Cilantro-chopped, handful
Spice blend
Garlic Powder- 1 tsp
Onion Powder-1 tsp
Cinnamon- 1/4 tsp
Paprika -1/4 tsp
Italian herbs- basil, parsely, marjoram, thyme- 2 tsp
Salt- to taste or 1tsp
Sugar- 1/2 tsp
nutritional yeast (optional)-1 tbsp
Oil- 3-4 tbsp
Panko Bread crumbs-1 cup
To assemble burger:
Burger Buns
Butter
Lettuce leaves
Tomatoes
Cheese slice (optional)
Steps
In a food processor, chop the ingredients except for oil and 1/2 cup breadcrumbs.
The mixture should be semi-dry enough to shape into patty. Shape into patty and coat with breadcrumbs and set aside.
Once all patties are shaped, place on a large baking tray with 1 inch gap between patties.
Apply some oil to each patty and bake in a preheated oven at 385 F for 20 mins, flipping them halfway. Alternatively, you can shallow fry patties in a pan.
Note: The patties dry up if baked for long, sprinkle some water and additionally bake until golden brown
To assemble:
Apply some ketchup and mayo to burger buns. Add patty, lettuce leaf, tomato and cheese slices. Serve it some homemade fried and enjoy!
