The nuttiest and chocolaty cookies perfect for afternoon snack with tea or coffee
We recently went to Hawaii and got some macadamia nuts with a lot of ambition to make some treats. Personally, I cannot eat them by themselves, they are too rich for me.
These can be easily made with simple ingredients lying around in your pantry. It just took me 20 mins to mix everything up and bake. Add 10 mins if you are browning the butter from scratch. Browning the butter is a game changer but if you don't want to do that then don't worry, swap out for melted butter instead.
Ingredients
Wet Ingredients
Brown butter , 1 cup
Butter , 1/3 stick
“Flax” eggs - 2 tsp flaxseed powder soaked in 6 tsp water
Vanilla essence - 1 tbsp
Brown sugar- 3/2 cup
Maple syrup - 1/3 cup Dry Ingredients
All purpose flour or maida - 3 cups
Cocoa Powder- 2 tbsp
Baking powder - 1 tbsp
Salt- 1 pinch
Almond flour- 1/3 cup
Macadamia nuts - 1/2 cup chopped
Steps
Preheat oven to 350 F/ 180 C.
In a mixing bowl, beat all the wet ingredients together.
Slowly add the dry ingredients and mix until homogenous. Do not mix the flour too much, as it results in gluten development leading to tough cookies.
In a parchment lined baking tray, divide the cookie dough into even sized balls and flatten slightly. These cookies will not spread too much, hence we need to flatten them slightly.
Bake for 9-10 mins and remove from oven to cool down.
Optional: Melt some chocolate chips in a microwave and drizzle overtop.
