Fall in Love

Fall is a favorite season for a lot of people. Cold weather, cozy vibes and some delicious home-baked treats. What's not to love?!
Bake something with your heart

This year I wanted to try different baking recipes that I have never done before. No pumpkin breads, or pumpkin cookies or Cinnamon rolls. These are incredibly delicious and I have made them almost every year (Maybe I'll share some recipes later).

I wanted to get into baking donuts, pies and crumbles. I love donuts and wanted to try the baked version- so I tried the simple Maple Glazed Baked donuts


I like to challenge myself with baking without eggs. Growing up in India, "eggless" bakery items were readily available in the market. Although I do consume eggs, occasionally- I am not a huge fan of the eggy taste in baked goods. Its usually masked by tons of sugar and spices. But I have noticed, if you have less sugar you can smell and taste the egg. Or maybe that's just me sitting here with my ultra sensitive nose.


Maple Glazed Donuts


Ingredients:

For Donuts

  • All Purpose Flour - 1 1/4 cup or 110 gm

  • Coconut Flour- 1/4 cup or 45 g; Can use AP flour instead

  • Flax Egg -1

  • Baking soda - 1/2 tsp

  • Baking Powder -1/2 tsp

  • Salt - 2 pinch

  • Brown sugar - 1/3 cup

  • Full fat yogurt - 1/4 cup

  • Vegetable oil - 1/4 cup ; I used avocado oil

  • Whole milk -1/4 cup

  • Water - 1/4 cup ; coconut flour tends to absorb water too much, hence need to add water to make batter the right consistency

  • Vanilla essense/paste - 1/4 tsp

  • Cinnamon, ground- 1/4 tsp

For Glaze

  • Butter, melted - 1 1/2 tbsp or 20 g

  • Powdered sugar - 3 tbsp or 40 g

  • Maple Syrup - 1 tbsp

  • Salt - pinch; skip if using salted butter


Steps

  • Preheat oven at 350 F or 180 C

  • Mix dry ingredients in a large bowl. Make sure there are no large lumps of brown sugar. Break down by hands if necessary

  • In a separate bowl or measuring jog, add wet ingredients. Whisk until homogenized

  • Slowly pour wet mixture into the dry ingredients and mix until combined. The batter is thick and goopy.

  • Fill a piping bag with the batter. If not available, you can pour the batter carefully with a spoon. but piping is the easiest method.

  • In a greased donut pan, pipe in the donuts.

  • Bake for 20 mins for a nice golden brown outer covering. Poke a toothpick into the donut to check there is no raw batter.

  • Remove the donuts and invert immediately onto a cooling rack.

  • Meanwhile, Add the glaze ingredients into a bowl. Once the donuts are completely cooled, dip the donuts slightly onto the glaze and place on a plate with glazed side up. Alternatively, you can also pour the glaze onto the donuts- there is no wrong way to do it.
