Ever crave delicious chocolate hazelnut sweet? I gotchu with this healthy-ish recipe.
I love Ferrero rocher chocolate. Hands down it is the my favorite combination with hazelnut, chocolate and crispy wafer. I am not saying the following recipe is a straight up substitute for the chocolate but it will surely curb your craving with its chocolate-hazelnut sweet goodness.
Ingredients:
Whole hazelnuts - roasted - 3 cup
Medjool Dates (pitted)- 14 to 15
Pumpkin seeds, chia seeds, hemp and flax seeds - 1tbsp each
Cacao powder- 1 tbsp (You can also use cocoa powder)
Milk chocolate chips or cut- 1/2 cup
Dark chocolate (mix) chips or cut- 1/4 cup
Coconut oil- 1 tbsp
Maple syrun- 2 tbsp
Vanila extract- 1 tsp
Almond flour - 2 tbsp
Oats - 1 cup
Steps:
Preheat oven at 400 F
Spread oats on a baking tray and toast for two minutes.
If hazelnuts aren't pre-roasters, roast in over for 5 mins. Do not let them burn. Set aside a few hazelnuts (14 to 15).
In a food processor, add the remaining hazelnuts and pulse for few seconds. you can use a blender for this.
Remove about two tbsp of crush hazelnuts and set aside.
Add the remaining ingredients except for the chocolate and coconut oil.
Blitz until mixture is completely crushed and of maleable consistency. Add almond flour if dough is too soft or add some melted coconut oil if dough is too crumbly. We will be making them into ball shaped pieces.
In a separate bowl, add chocolate chips in a bowl and add the coconut oil. Microwave for 30 seconds and stir. The chocolate should be a pourable consistency.
Now create an assembly line, with the hazelnut mixture, whole hazelnuts, melted chocolate and tray to place the round balls.
Take a tbsp of mixture and shape it into a ball. Make an indent in the center with your finger and place a whole hazelnut. Add some more mixture and pack tightly into a ball.
Continue making more until all the mixture is used. Drizzle the chocolate over the balls or Dip the balls in the chocolate. Let it set for at least 2 hours in refrigerator before enjoying.
The snacks can be stored at room temperature upto 10 days and in the fridge for a month.
If you want to control the sugar intake, you can use sugar free chocolate chips as well.
