Banana Oat Waffles

Nothing like waking up to a plate full of crispy waffles with drizzles of nutty plant' based butter and sweet maple syrup. Here is my recipe to create the perfect moist and crispy eggless waffles. And they can be made all plant-based too!




Ingredients:

  • Banana, ripe and peeled- 1

  • Oat Flour-1/2 cup

  • All purpose flour - 1/4 cup, can substitute for gluten free flour

  • Baking powder - 1 tspn

  • Vanila extract - 1 tspn

  • Cinnamon - 1 pinch

  • Salt - 1 pinch

  • Buttermilk- 1/4 cup, can substitute for 1/4 cup whole milk with squeeze of lemon juice

  • Oil- for greasing

Optional toppings:

  • Blueberry

  • Nut butter

  • chocolate chips

  • fresh fruit

  • Maple syrup

Appliances use:

  • Waffle Maker

Steps

  • In a large bowl, Peel and mash banana until paste forms.

  • Add the dry ingredients and mix. Add in buttermilk to create a semi-thick batter. The batter should not be too thin or too thick. It should be thick and you should be able to pour it into the waffle maker.

  • Plug in the waffle maker and preheat. Grease the plate with oil and pour in batter in the center. Press down on the cover of the waffle maker.

  • Depending on the waffle maker, it should take 5-7 mins to cook the waffle. If you want crispy waffles keep for longer.
